ARROZ AL HORNO WITH RAISINS AND CHEAKPEAS volver

RICE MADE IN THE OVEN

INGREDIENTS

-150 grams of chickpeas (soaked the day before)

-100 grams of raisins without seeds (They will have to be soaked two hours before).

-200 ml of olive oil

-400 grams of rice

-Saffron

-Salt

-Two potatoes

ELABORATION

Chickpeas are cooked. The cooking water is reserved since this will be the broth in which the rice will cook.

Potatoes are peeled and cut into thin slicese. Are fried in olive oil.
Remove the pan from the heat and when the oil has cooled a little, sauté the raisins and rice.
It is incorporated into the casserole so that the raisins remain on the rice, otherwise they would burn. 

Meanwhile, heat the oven to 180 degrees.

Add salt, saffron and broth (twice the amount of broth than rice). Add an abundant mincemeat of garlic and parsley and decorate with the potatoes that we had fried before.

Bake for 35-40 minutes at 230 degrees, ensuring that it does not burn...
